Giff's Original Mango Spice Salsa Recipes
Celebration Rack Of Lamb1 rack of lamb, 1¾ lbs. (7-8 ribs)
Salt & freshly ground pepper
1/2 cup Award Winning Giff's Original Mango Spice Salsa
3/4 cup fresh bread crumbs
Sprinkle lamb with salt & freshly ground pepper. Spread lamb with Dijon mustard (optional). Mix Giff's Original Mango Spice Salsa and bread crumbs. Spread on fleshy side of lamb.
Roast in 400° oven 35 minutes or until meat thermometer registers 155°. Remove from oven. Let rest 5-10 minutes prior to carving.
