Giff's Original Jalapeño Pepper Relish Recipes
Filet Of Sole Provencal4 pieces filet of sole (1 - 1¼ lbs.)
1 tablespoon flour
1 tablespoon olive oil
3 large cloves garlic, minced
1 cup chopped tomatoes (fresh or canned)
1 tablespoon drained capers
12 pitted green olives
2 tablespoons Giff's Original Jalapeño Pepper Relish
2 tablespoons dry white wine
Coat fish with flour. Heat oil in med/large skillet. Cook fish until lightly browned on both sides. Remove from pan. Keep warm. Add garlic to skillet. Cook 1 minute. Add remaining ingredients. Simmer 5-10 minutes or until slightly reduced. Spoon sauce over fish. Serves 4.
