Baked Cornish Hens With Red Potatoes4 red potatoes, scrubbed and sliced
1 Cornish hen, split
3 tablespoons Giff's Original Grill & Marinade Sauce
1 tablespoon freshly squeezed lime juice
1 tablespoon tequila
1 tablespoon brown sugar
In 9 inch round baking dish, cover bottom with potatoes.Top with hens. Bake, uncovered un 425 degree oven for 15 minutes. Mix remaining ingredients. Pour over hens. Reduce oven to 375 degrees. Continue baking for 40 minutes or until hens are tender and juices run clear when pricked with fork. Makes 2 servings.
